oilpainted banana cookies

today’s highlight: banana cookies.. ^^

nope, bunbun and papao weren’t having a huge fight and throwing all our plates in the air..

what happened today, in such a quiet morning, was that without any warning, our plates rack fell…..

it was veryyyyy surprising!! very!!!

just when bunbun thought that it’s gonna be an easy day.. hiks.. turned out that we have to buy new plates.. (yipppieee?)

and maybe even… a new kitchen cabinet… (yippeee again?hihihi)

but of course, that is only when the money is there.. and for now, all the remaining plates are resting on our dining table. it looks so full now.. -____-

in the afternoon after i swore to not bake at all today (as if it’s gonna happen ),  i was tempted by a recipe in internet.

see, we always have bananas that turn so dark.. and this recipe could be an alternative.. usually i only make banana cake from it.. and now i can also make…

Banana Cookies

source: cookie collection

  • 1/2 cup of unsalted butter, room temperature
  • 1 cup of sugar
  • 1 egg, room temperature
  • 1 cup of mashed bananas (i used 2 bananas)
  • 1 teaspoon of baking soda
  • 2 cups of flour
  • pinch of salt
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground mace or nutmeg
  • 1/2 teaspoon of ground cloves
  • 1 cup of pecans (walnuts and chocolate chips are fine alternatives) (i used almond slices for topping instead)

beat butter and sugar until it becomes fluffy, pour the egg and continuing beating till fluffy

pour the mashed bananas and baking soda.

let it sit for 2 minutes, The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise.

sift all the dry ingredients and fold it well..

u can also add some nuts if u want to.. i made mine without, cos my oldest daughter likes it plain.. so later on i just put some almond slices on top of the batter when it’s already on the parchment paper..

drop the cookie batter on a baking tray (and put some almonds) and bake it for about 15 minutes.

the texture of the cookies is soft.. it’s like cake, but in a mini portion.. i likeeee it!! my hubby likes it.. and the children said they like it, too..^^

next time i’m gonna try the crunchy recipe..

*another thing from the kitchen today..

i dunno what this is called.. puddingbread i suppose.. hihihi..

it was inspired by a a good friend that posted her pudding bread for her son.. hers looks very yummy.. mine, i did without recipe.. so i  just mixed some snowsugar, 6 breads, 2 eggs, and milk.. and shredded cheese and chocolate in the middle.. -____-

it tasted a bit like martabak.. i dunno why is that..

Nalea is not a fan of cheese.. but lucky for me, i have the all-eaters-family members : Papao and Nara..  even for them it was not a hit.. oh well..

lesson learned, next time i should just follow the recipe..

okay folks.. guess i’m gonna have some sleeps now..
